The People & The Oven

OUR STORY

We’re Bakker Aldo, a team obsessed with sourdough, natural ingredients, and the craft of real baking. We take our bread seriously, but we don't take ourselves too seriously. Around here, a happy team and a warm oven are the most important ingredients. What started with Aldo’s vision for simple, honest bread has grown into a community of bakers who show up every day to keep the craft alive.

REAL BAKING

We bake with heart, using only natural ingredients and traditional methods. By sticking to slow-fermented sourdough, we ensure every loaf has real flavor and the perfect crunch. No shortcuts, just time.

THE DETAILS

We’re obsessed with the small things. From our hand-shaped loaves to our buttery viennoiserie, everything is made with patience. If we aren't proud of it, it doesn't leave the kitchen.

GOOD VIBES

A bakery should feel like home. We’ve built Bakker Aldo on teamwork and good energy. We want you to feel that same warmth every time you walk through our doors.

Meet the crew!

Illya | Owner & Baker

You’ll usually find Illya at the workbench or behind the counter. He took over the bakery to keep Aldo’s original vision alive, but he’s always looking for a challenge whether that’s perfecting a new recipe or working out a custom request for a customer. He’s big on flexibility; if it makes a customer happy, he’ll find a way to make it work. When he’s not covered in flour, he’s likely at the gym, bringing that same energy from the weights back to the kneading table.

the early start

We’re working 22 hours out of every day, hand-shaping every loaf before the city wakes up.
